Roasted Butternut Squash Pasta (2)

If you are a busy bee during the week days and need to prep your meals over the weekend, this is an excellent dish to make ahead as the leftovers are fantastic!

Meal Idea 1: compliment it with a side of fresh berries, caprese salad and a simple side salad.

Meal Idea 2: compliment it with cajun style shrimp and citrus fresh fruit.

When meal planning be sure to consider the fruit & veggies that are in-season this month!

Planning to have the dish solo? Add in a little extra protein to create a more balanced, filling meal: your favorite bean, tofu, shredded chicken, extra small shrimp, etc.

Not sure what to do with the remaining bok choy and sage? Shred the remaining bok choy to (1) add to salads, stir fry, etc. throughout the week OR (2) add to the pasta dish which will boost nutrition and extend the dish! Similar thoughts with the sage but rather than adding ALL of the remaining sage to the dish just add an additional tablespoon. Use the sage on meats you may prepare that week to enhance flavor especially for those very lean or lean proteins.
