This weekend we hit up our local farm stand leaving with fruit & veggies galore!! I was inspired by all the freshness!! AND I knew we really needed to put the fresh produce to use, otherwise before we knew it, all would become overly ripe and go to waste. I wanted to keep the produce at it freshes state so I whipped up a quick & easy and ohhh so fresh pico de gallo style dish. With all of Adam’s mmmm’s that followed his first few bites, I knew it was one to share.

I provided quantities but be sure to make it your own! Add a little more of the produce you really like or maybe swap in different types of the produce (e.g., swap green onions for red onions, mangoes for pineapple, black beans for kidney beans).

Enjoy as a dip, side dish to tacos, quesadillas, tamales or making it your lunch bowl with a serving of quinoa, wild rice or barley topped with a serving of extra small shrimp.
